Our cows
In order to make our organic Parmigiano Reggiano, we breed about 700 cows - most of them of the Italian Holstein breed. We also have some cross-bred Montbeliarde cows as well as some cross-bred Swedish Red cows. No matter at which time of the year you’ll visit us, you’ll always find about 350 cows in lactation. Our herds are kept in three different locations - each of them with a barn and pasture areas.
Calves are getting fed with cow's milk until they can be weaned. We respect our herds: This is why they are fed using no GMOs, maize silage, nor grass silage. Our dairy cows can yield up to 26 litres of organic milk a day.

Forage first
80% of the diet of our animals is based on local grass and hay: 70% of the forage we use comes from our fields. We buy the rest from local organic producers.
Since local forage is the very foundation of the diet and the milk flora of our cows, it is crucial to make sure they only get the best local products. Milk flora has a major impact on the composition and quality of our organic cheese, as Parmigiano Reggiano is made out of raw milk. While you are eating our Parmigiano, you are therefore experiencing a true taste of our land.
During the summer about 20% of the diet of our cows is made out of grazed and fresh grass cut on a daily basis.
